Yield: Makes 1½ cups
  • 4 tablespoons olive oil
  • 2 cloves garlic, peeled and sliced thinly
  • 3 thick slices of day-old bread, cubed (I love using French bread)
  • Salt and black pepper
  • Herbs (parsley, basil etc, optional)
  1. Preheat oven to 180 degrees Celsius. Line a baking sheet with parchment paper.
  2. Heat olive oil in a small pan over medium heat until warm. Add in sliced garlic - the garlic should sizzle gently. Cook over medium-low to low heat until the garlic is golden brown in colour. Remove from heat and discard the garlic slices (or crumble the crispy bits into a salad for additional flavour.) Toss the bread cubes with the oil and spread them on a single layer on the baking sheet. Season with salt and black pepper and some herbs if desired.
  3. Bake for 20 to 30 minutes until the bread cubes are dry and crunchy. Serve with salads.
