Watermelon Iced Tea
Yield: Makes 1.2 litres of tea (Serves 4 to 6)
- 1 litre water
- 4 teaspoons black tea leaves (or 2 black tea bags)
- 3 tablespoons caster sugar
- 200 grams watermelon, seeds removed and blended into a juice
- Additional simple sugar syrup for serving
- Bring water to a boil and stir in tea leaves (or tea bags) and sugar. Steep the tea for 2 hours.
- Strain the tea and chill the tea completely in the refrigerator for at least 4 hours, preferably overnight.
- Stir the pureed watermelon into the chilled tea. Taste and add more syrup if you prefer the tea to be sweeter. Pour into glasses and serve.
- To make a simple sugar syrup, dissolve sugar into hot water in a ratio of 1:2 (1 tablespoon sugar to 2 tablespoons water).
