The Night Before: Rinse the pork ribs and pat dry with paper towel. Place the pork ribs in a large Ziploc bag. Add in the rest of the ingredients - lemon juice, maple syrup, soy sauce, star anise, cinnamon stick and garlic. Mix the ingredients together, then seal the bag. Place it in the refrigerator to marinate overnight.
On the Day: Preheat the oven to 200 degrees Celsius. Tip all the contents - meat and marinade - into a roasting tin that fits the ribs snugly. Bake for 1 1/2 hours, basting the meat frequently and turning them once (or more if needed) halfway during baking until the meat is soft and golden-brown in colour. Serve immediately with some roasted vegetables or mashed potatoes.
