Event: Asian Masters – Masterchef Workshops

The wide variety of Naturel products

The Asian Masters is a popular Gastronomy Experience in Singapore. This is the 4th Edition being hosted and there are various types events to participate, such as wine pairing dinners and masterchef workshops.

Last Sunday I was invited to one of the materchef workshops by Naturel at ToTT. Naturel is product range from the Lam Soon Group, featuring a wide range of oils and organic products. This 2-hour workshop features a chef demonstrating 2 dishes using Naturel ingredients. Participants were also gifted with a bag of Naturel goodies – can’t wait to try them out!

Meet the chef!

Chef Anthony, 29 years old, is the restaurant owner of Cocotte (making a mental note to go there for dinner some day). He is a real nice guy and very helpful in answering the queries the participants have. He is really cool about letting me take a photo of him – I went there alone and was a little lazy asking someone to help us take a photo…

The first dish he prepared was a sous vide duck breast with an orange ginger-spice glaze. The duck was served with a penne salad with a soy-sesame dressing. The second dish is flaked cured salmon rillettes with a macaroni salad with a lemon-sesame dressing. Both dishes are delicious (yes, we got a small sample of the dishes to try!) and I’m hoping to recreate them at home soon.

Both dishes uses sous vide cooking – a technique of cooking that seemed to be gaining popularity here. It involves placing your meat or seafood in a vaccumed bag, then the bag is placed in a water bath and cooked at the same temperature until desired doneness. This method ensures the food is cooked in and out at the same temperature – no risk of overcooking and it apparently yields a more tender end product. Sous vide cooking is done using a sous vide machine – you can find one at SGD 997.99 at ToTT (very expensive!) I know I won’t be able to get a machine any time soon, so I have to look for an alternative…

Overall it had been a really fun and delicious experience – there are a lot of other events being hosted at The Asian Masters, so do check them out and sign up before they are all gone! Thank you Naturel for the invite! 🙂

    How I would love to attend an event like this one, Jasline. Watching good food prepared and plated by great chefs is fascinating. I know many are praising sous-vide preparations but I won’t be jumping on that band wagon anytime soon. As you pointed out, it is rather expensive and, really, how often would I use it?
